The trattoria was born out of necessity when peasant farmers opened their homes and hearts to subsidize their income. They proudly offered regional cuisine with it’s own characteristics. Tuscan cooking was simple and to the point with quality and freshness as the most important ingredients. We at Tuscan Today endeavor to follow this tradition and bring you an authentic touch of Tuscany.

Our customized oven was crafted by Valoriani in Tuscany – the stones used are from the Tuscan countryside and are shaped into the traditional dome which retains the high heat necessary for this kind of cooking. We use black oak exclusively and cook at temperatures upwards of 600 degrees. Imparting delicious flavors while retaining the natural juices and aromas of the food. All items cooked in the oven are first marinated in fresh herbs and olive oil to enhance the natural flavors.
